Fruitcake

Put the following in a saucepan: 1 cup sugar, 3 and 1 quarter cups mixed fruit, half a pound of butter or marg, 1 teaspoon bi carb soda, 1 teaspoon mixed spices and 1 cup water. Bring to the boil and then cool off for 15 minutes. Have ready 3 well beaten eggs, add to the mixture, add 1 cup plain flour and 1 cup of SR flour, add 2 teaspoons of rum. Mix together with a spoon and put into a lined and greased 20cm square tin. Bake for approx 2 hours in a slow oven. Might cook a bit quicker so check at 90 minutes. Keeps well, can freeze it and makes a big cake.
